  A limitation will be placed on the back of the food service license to use a footed colander when using the prep sink to wash
  fruits or thaw foods as the prep sink is not indirectly drained.

  Delfield refrigeration unit has been removed from service and will be repaired as it is not holding proper temps. Great job
  monitoring temperatures and responding quickly in order to protect food safety!

  The back door is observed to not be tightly sealing and needs a drag strip to help prevent pests from entering the facility.
  This is an important part of controlling pests.

  Controlling pests.
  Pest control is being done in the store room near the back door. Mouse waste is observed in the corners and needs to be
  cleaned up frequently to help monitor activity. Work with the pest control contractor to identify and address any areas of
  entry that need to be sealed.

  Backflow prevention - air gap.
  An air gap is needed at the prep sinks. If the sinks used for food preparation will not be indirectly drained a footed
  colander should be used and a limitation will be placed on the back of the license.
